Dear Colleagues:
I received an update on the congress from Billy and Arnold. While they, and the Dubai organizing committee have done an outstanding job in arranging for all the details, the less encouraging aspects is the relatively low registration rate. Yes, we can hope that a lot of last minute registrations will come in, but we cannot take that chance without personally getting involved.
I now appeal to you to make the attendance a top priority and to let me know how many have registered from your country and your region. This will give you an idea what it is that you personally can do.
Here are some ideas:
1. Call your respective committee members and encourage them to attend.
2. Contact the Master Chefs from those countries that have been approved and let them know that they can be recognized as the first Global Master Chefs at the Congress.
3. Call foodservice companies in your country/region and promote the congress.
4. Promote the congress to the countries of the finalists of the Global Chef and encourage them to support their chef by personally attending.
5. I am sure that you have other ideas as well.........
It is not enough for us to just show up. We as the leaders of WACS have to step up to the plate and show some decisive and productive action.
Please let me have your ideas and the current attendance from your country/region and do not forget that this congress is a reflection on all of us.
Again, I appeal to you to make this your highest priority.

As you know, The World Association of Chefs’ Societies has developed a new identity and logo, which now appears in all of our publications, web site and collateral materials. Along those lines we have also commissioned the casting of an attractive, new Honorary Member medal and pin, which will be available to you at no charge.
I like to encourage you to attend the congress in Dubai where I would be pleased to personally recognizing you and the other Honorary Members with this new medal at the Congress Gala Dinner.
Please log on to the WACS web site at www.wacs2000.org for further information how you can register for the congress. In case you cannot attend we will send you the new medal, pin and diploma or present it to you at the next continental meeting. Please be sure to let me know if you plan to be in Dubai or send me your current mailing address in case you cannot attend.

Dear Colleague:
It is my pleasure to announce to you that the following member countries/regions, Austria, Germany, Holland, South Tirol, Switzerland and USA have applied and their programs were officially approved by the WACS Master Chefs Committee. Based on that, all Master Chefs, originally certified by any of these countries are now eligible to receive the Global Master Chef medal and diploma.
At the same time I like to invite you to complete the **attached application and bring it to the WACS congress Dubai, to join the first group of WACS Global Master Chefs as you receive your medal and diploma on stage at the Gala Diner. Please log on to the WACS web site at www.wacs2000.org for further information how you can register for the congress. In case you cannot attend the congress, get in touch with your respective Continental Director, who can present you with the medal and diploma during the next continental meeting.

| GLOBAL CHEFS CHALLENGE |
| About Global Chefs Challenge |
This practical cookery competition is a new WACS 2008 initiative. It will be inaugurated in Dubai during the 2008 congress. Seven senior finalists - each of whom will have triumphed as the best chef of their geographical region (through a world-wide series of competitions) – will be eligible to join culinary battle and compete for the title Global Chef 2008. This event will be a permanent fixture on the WACS 2008 competition calendar. The winner of this biennial battle can truthfully boast of holding a verifiable worldclass culinary title.

| JUNIOR CHEF FORUM |
| About Bill Gallagher Junior Chef Forum |
Inaugurated by our Honorary-President-for-Life, Dr. Bill Gallagher, the Junior Chefs Forum will be conducted at the same time as the main congress and will offer some elements of the main congress programme to juniors. The forum is a platform for the young chefs of the world to air their views. The encouragement and development of junior chefs is an important part of the WACS 2008 philosophy.
Although there is a separate programme planned for the junior forum it will be designed so as to converge with the main congress from time-to-time so that the juniors may associate with the senior delegates as much as possible.
In addition to the culinary competition; educational programme, networking and the exchange of ideas and information it will offer workshops and visits to key sites of interest during the period. It is open to all member countries of WACS 2008 each of whom will also be able to send one junior member to participate in the Hans Bauschkens culinary challenge at no cost. Also included will be junior representatives from the ECG. Junior chefs from around the world will be encouraged to attend so as to build international goodwill, and to develop future chefs.
A special dining facility will be part of the Hans Bauschkens culinary challenge so that juniors can sample the meals produced by their colleagues at the competition.

Here, twenty young chefs will each represent their respective countries, vying to be adjudged as the best young cook in the world. With only six-hours in which to complete the entire test - from the composition of the menu, to the service of the meals – this competition is designed to challenge each junior to prove to the jury the evidence of his/her culinary and organisational skills.(www.wacs 2000.org)

Dear Colleague
My belated compliments of the season, and best wishes for a prosperous and successful 2008. It’s a year in which the World Association of Chefs Societies celebrates its 80th anniversary, and one of the main events that will form part of the commemorative celebrations is the WACS Congress, taking place in Dubai from 12 to 15 May.
I very proudly have the honour of being the custodian and namesake of the Bill Gallagher Junior Chefs Forum, which was established in 2002 by President Deguchi of Japan and myself to encourage younger chefs to participate in and attend the bi-annual conference of WACS. The Hans Bueschkens Junor Chefs Challenge, which takes place under the auspices of the Bill Gallagher Junior Chefs Forum, was created to pay tribute to the great Chef Bueschkens. The Forum and competition were hosted by the Japanese Chefs Association for the first time in Kyoto in 2002, and continued in Dublin, Ireland in 2004, where the competition component was increased and the Forum’s programme extended. In 2006, the Forum was held as part of the WACS Congress in Auckland, New Zealand, and saw young chefs from 25 countries attending.
The vision of the Bill Gallagher Junior Chefs Forum is to educate and involve junior chefs from around the world in a learning forum within the WACS Congress, by encouraging each member country to participate and therefore build upon their knowledge and the aims and ideals of WACS.
We are currently finalising a world class educational programme for the Forum, which will provide the future leaders of our industry with relevant, pertinent and valuable discussion topics, presentations and workshops containing information they can take away with them and share with their counterparts at home, ensuring that the benefits of their attendance are extended to other young chefs in each of the countries who participate in the Junior Forum. Aside from the educational aspect of the Forum, there is enormous benefit to young chefs in joining the international chef network at an early age and gaining insights and inspirations from chefs from around the world. Their exposure to the young chefs competing in the Hans Bueschkens Junior Chefs Challenge, which allows them to witness chefs of their own age
pitting their skills against one another is undoubtedly an inspiring experience. The Junior Forum enables us to take young chefs at their most formative stage and expose them to experiences which will inspire them to greatness.
On behalf of WACS, I invite you to participate in the Forum by sending just two young chefs who can share their experiences with other future leaders of the hospitality industry in your country. We hope to achieve a target of 50 junior chefs attending the Bill Gallagher Junior Chefs Forum, which takes place on 13 and 14 May this year. The registration cost for the Junior Forum is USD420. Included below is an outline of the programme for the Junior Forum, and the detailed programme will shortly be available on the Dubai Congress website, where you will also find registration forms and details on how to book your young delegates. I look forward to seeing young chefs from your country in Dubai in May, when I will be addressing the delegates of the Junior Forum.
