Every Regional Culinary Team consists of a team manager, three chefs and one pastry chef

All of the Regional Culinary Teams' dishes are displayed cold. This means that the visitors cannot taste any of their creations.

Category A "Culinary Art"

The teams chose between two of the three following tasks:

One show platter "Fingerfood, Tapas and/or Snacks"

prepared cold, displayed cold: 4 different kinds, 5 individual portions each
prepared hot, displayed cold: 4 different kinds, 5 individual portions each

One cold festive platter for 8 people
Six different starters, individually plated for one person
A maximum of 25 points may be obtained for each of the four evaluation criteria: "Presentation/Innovation", "Composition", "Professionally Correct Preparation" and "Arrangement/Serving".

Category B "Culinary Art"

One ovo-lacto-vegetarian platter (free of meat, while dairy products and eggs may be used) as a main course for four people (prepared hot, displayed cold)
One 3-course menu (starter, main course, dessert) for one person (prepared hot, displayed cold)
Four different, individually plated, innovative main courses (prepared hot, displayed cold)
Again, maximum of 25 points may be obtained for each of the four evaluation criteria: "Presentation/Innovation", "Composition", "Professionally Correct Preparation" and "Arrangement/Serving".
